Salmon and Totoaba cubes.

You need:

Cubes of salmon and fresh totoaba
1/2 avocado in cubes
Eureka lemon zest and juice
2 Sliced onions
A handful of clover sprouts
1 Tablespoon of the following: rice vinegar, toasted sesame oil, olive and soy oil
Salt to taste
A handful of chives finely chopped
Lots of Northern Seed Sauce


1. Add the avocado, salmon and totoaba cubes to a deep plate. (Mix carefully so the avocado doesn't lose its shape.)

2. Add the lemon zest, onion tails and sprouts

3. Add the rice vinegar, toasted sesame oil, olive oil, soybeans, and lemon juice.

4. Season with a little salt, a pinch is enough ;)

5. To finish, add a handful of finely chopped chives and all the North Sauce you want

6. Let marinate for a few minutes
